Internationally renowned as a pioneering researcher in recipe creation and wine and food pairings, François Chartier tirelessly cultivates collaborations and partnerships all over the world.
And in 2018, this “Créateur d’harmonies” will launch a world tour. He’ll be sharing the results of his chocolate research on five continents at press conferences to be held by Cacao Barry. The tour will reach London on January 29, Berlin on April 17 during the World Chocolate Master Cup*, and Lyon on June 4. It will run until 2019 with stops in Paris, Madrid, Milan, Miami, and Chicago.
The conferences, which are a logical next step after presentations given in Tokyo and Los Angeles in 2017, will feature a presentation on chocolate and then some aromatics work and laboratory testing, by Chartier himself, of the aromatic profiles of 24 original chocolates from Cacao Barry. Next, there will be a tasting workshop, where star chefs, pastry chefs, and chocolatiers from the world’s major cities can taste the chocolates, paired with food and wine inspired by Chartier’s aromatic science, as well as his own creations made in partnership with local master chocolatiers
The conferences will invite the top professionals in each city, along with a few hand-picked guests.

Chartier will test 22 chocolates created for the occasion by 22 master chocolatiers selected from 22 countries. They must create a Cacao Barry OR NOIR chocolate and a recipe that features it, building on the results of Chartier’s aromatics research, published in his international best-selling book, Taste Buds and Molecules.
