On January 14, 2020, SONY A.I. Tokyo’s team of scientists, accompanied by Chartier, presented Phase 1 of their new project Artificial Intelligence: A New Ingredient for Creativity in Gastronomy to an audience of about 1 000 top chefs from around the world. The event was part of Madrid Fusión, the leading culinary trade fair for gastronomic innovation.

Quebec “créateur d’harmonies” François Chartier presented his science of molecular harmonies and sommellerie at the South by Southwest Festival in Austin, Texas, in March of 2019.

Invited to participate by Sony Corporation Japan, he also discussed AI & Robotics Cooking along with two of Sony’s foremost scientists, Masahiro Fujita and Michael Spranger.

SONY AI & CHARTIER AT THE INTERNATIONAL BARCELONA SCIENCE & COOKING CONGRESS

Historic World Premiere: Conference on the new SONY AI & GASTRONOMY research project, with Hiroaki Kitano (President and CEO of SONY Computer Science Laboratories and President of SONY AI. Kitano developed the AIBO robot, and many others), as well as with François Chartier who announced his participation as a consultant member of the research team.

Every year, the Sciences and Cooking World Congress in Barcelona brings together the leading scientists and the best chefs for a series of seminars and demonstrations. The list of guests for the 2019 edition included chef Heston Blumenthal, from Fat Duck (a prestigious three-star Michelin restaurant in the UK) and American Harold McGee, a leading expert in food science and culinary chemistry. Among the participants were also chef Ferran Adrià, of the elBullifoundation (and co-founder of the famous elBulli restaurant which was often awarded the title of Best Restaurant in the World) and Hiroaki Kitano (President and CEO of SONY Computer Science Laboratories and President of SONY AI; Kitano has developed the AIBO robot, and many more).

It was with Hiroaki Kitano that François Chartier led a presentation discussing their project on the potential of Artificial Intelligence (AI) in the service of gastronomy. Then, it was at Sofia Be So, with the collaboration of chef Carles Tejedor, that François Chartier invited 30 speakers/scientists, including Harold McGee (famous author of the true bible that is On Food and Cooking) to taste a meal elaborated according to the principles of his aromatic science.
