Since his very first 2017 vintage, François Chartier has been able to bring about a small revolution in the highly codified world of Japanese sake by proposing what he has called “The New Art of Blending in the World of Sake”. The art of “blending” exists in the world of great Bordeaux wines, just as it does in the world of champagnes, sherry, port or whisky, but not in the world of Japanese sake. And yet, all the great winemakers and cellar masters know that the moment of blending is the key moment, where wine or brandy acquires its soul. Sake now has its moment when the magic of “blending” works. Once again, Chartier has been able to “see what others don’t see”.
