As autumn arrives, comforting flavours are in the spotlight. With the same name as the molecule that signs the aromatic profile of the dried fig, Solérone d’automne is a brown beer that calls for fragrant and flavourful dishes.
NOSE
This third beer from our Série Gastronomie presents a very aromatic, rich and complex nose with autumnal notes of dried fig, caramelized apple compote, cocoa and roasted chestnut.
On the palate
The initial impression on the palate is full, without too much density, as if by magic it were airy. It reveals notes of cooked apple, chestnut cream and melted, almost caramelized butter, as well as hints of aniseed. It has an exceptionally long cocoa finish, with a noble and sweet bitterness. Considering its richness, this beer is of rare drinkability.
Harmonie
It goes perfectly with dishes that share the same aromatic signature, such as white meats, grilled, braised or smoked red meats, dried meats (prosciutto, Bündnerfleisch “Grisons Meat”, etc.) and washed-rind cheeses. This wine also goes well with savoury/sweet recipes dominated by coconut, vanilla, dark chocolate, dates, nuts, or dried fruit. Serve it by the glass, as you would a fine wine.
